Step-By-Step
Step 1: Rinse Filter
Add 20 g of medium-fine ground coffee to the filter.
Gently shake the dripper to create a flat, even coffee bed. Make a small indentation in the center to help the bloom saturate evenly.
Step 2: Add Coffee
Add 20 g of medium-fine ground coffee to the filter.

Step 3: Bloom
Start your timer and pour 60 g of water, beginning in the center and moving outward in small circles.
Make sure all the grounds are evenly saturated. Allow the coffee to bloom until 0:45.
Step 4: Pour
Beginning at 0:45, pour slowly in controlled circular motions.
Pour in two stages: Pour to 200 g. Allow the water level to drop slightly. Complete the final pour to 320 g
Keep the water away from the very edge of the filter and maintain a steady, controlled stream.
Step 5: Enjoy
Allow the remaining water to pass completely through the coffee bed.
The brew should finish between 2:45 and 3:15. Remove the dripper, gently swirl the server, and pour the coffee into your mug.
Barista Tips
